NUTR 420 Medical Nutrition Therapy

This course introduces students to the application of nutrition science in clinical and therapeutic settings using the Nutrition Care Process (NCP). Emphasis is placed on comprehensive nutritional assessment, accurate diagnosis, effective intervention, and ongoing monitoring and evaluation. Students examine how medical, social, and dietary histories inform nutrition diagnoses, learn counseling techniques to support behavior change, and apply therapeutic diets to manage common health conditions. The course prepares students to design evidence-based nutrition interventions and evaluate outcomes in diverse populations.
